Hi Bryanna,
I'm thinking to apply US visa for my step-mom for two weeks trip.
1. Once its granted and she completes her travel, can I apply for her TRV application under CAN+ program?
Yes, she can apply under the CAN+ program after she gets a US visa.

2. Will this improve chances of TRV acceptance?
CAN+ could only help to expedite the TRV processing time. Just having a US visa (without traveling) won't help per se for a TRV otherwise.

3. Please let me know if two weeks appear very short?
Not really. Do let us know after she gets the US visa so we can advise for her TRV

Please need help. For super visa, do I have to submit insurance card or insurance confirmation details with application? Card doesn't include 100,000 coverage amount.

Dear All,

I am applying super visa for my mother who stays in India. She is planning to stay with us for 7 months. Do I need to provide her confirmed return tickets while applying? We do not have exact travel dates, so we do not want to book the tickets now. Please advice.

Not required. Just the flight itinerary

Thanks for the reply. Where do I get the flight itinerary? Does the screenshot from Air Canada/any other airline website work? Or is it to be a document provided by a travel agent?
Don't pay the travel agent for this.

Try Expedia or even Yatra allows holding bookings for up to 24 hours without paying for the tickets

Although I don't concur with the OP getting a flight itinerary, what Bryanna suggested is the quickest and cost-effective way to grab hold of one.
