First, what is the deadline of your letter, because
you do not want to have a departure order convert to a deportation order. That's a lifetime ban on returning to Canada. Of course, there's a process involved in correcting that situation.
Why did they serve you with a removal order?
If it is only because of overstay and not for any other reason (e.g., criminality) then as long as the departure order has not changed to a deportation order, you may file an inland sponsorship application - you meet the "common law partner" definition, though you do need to prove it to CIC. It is the public policy of CIC (and CBSA) to postpone enforcement of the departure order until such time as a decision has been made on the application. But if it's a deportation order, you need to speak with an attorney, because your case is now complicated.
If you leave Canada, your partner can sponsor you still. If you have a deportation order (and hence a lifetime ban) then you will need to also apply for an "Authorization to Return to Canada" (ARC), for which there is an additional fee and additional time to process an application.
