I got an email from Etobicoke landing, saying my pr will be finalized at the interview ...Attached to this email is a letter indicating the date and time of your permanent resident landing interview at CIC Etobicoke. what do I expect pls?

Expect to land and get a PR. 3 simple non-test questions (convicted of a crime in Canada or anywhere, dependents not listed in Canada or ahywhere, denied entry or asked to leave into Canada or anywhere". Then you get a COPR document.

So can my "landing" appointment take place at basically any border crossing/POE?

Nope. It will happen at an inland CIC office. If you exit Canada, it can be problematic. So, just follow the landing instructions (they will assign an inland office closest to you (by postal code)).

no, because inland applicants do not receive the CoPR by mail, it's handed to you at the appointment. In which office you will land is based on your postal code. If you are in BC, you will land either in Vancouver or in Surrey

I received a medical request for my wife yesterday but I didn't received the sponsorship approval yet. Is it normal ?

it was the case for us as well. The med request came in Dec 2016, and SA, AIP and DM came only in March 2017. But as @profiler mentioned, check ECAS regularly, especially using the sponsor's information (which will give you status on both the sponsor and the principal applicant).

If I was a betting person, there is an SA hidden in there (and it's just not been emailed out quite yet).

Hopefully! But in our case, even the GCMS notes of March 8th, 2017 didn't show SA... I don't think it's very common, but it can happen that medicals are requested without issuing SA.
However, like you, my best bet would also be that they have SA already.

Then it will mean that they have come to your file, and they want a medical to be completed, so that when they process it, the medical should be submitted.

Totally based on your postal code, and which office is closest to it. You cannot change that.
