Your wife can withdraw her sponsorship at anytime up until you land. If she withdraws before the application is approved, then it will be cancelled. If the application is approved, she can ask to cancel it up to the time you land, but it’s up to IRCC or CBSA to decide if they are going to do that.
It is not up to IRCC or CBSA. If a sponsor withdraws at any point before the PA lands, the app is cancelled. There was a case a few years ago where the sponsor withdrew while the PA was on the plane coming to land in Canada.

If you are already having problems so early in your marriage I would really reassess if you both should be married. I would prefer to go back to my home country versus living in misery for the rest of my life. I'm guessing this may be an arranged marriage where you may have not known each other/dated for a long time. The possibility of immigration becomes a bargaining chip unfortunately.
It was good relationship started back in our countries and continued afterwhile as long distance relationship for Long time. Apparently Being separate for years changed us.

I thought (and there is a distinct possibility that I am wrong.....it’s an age thing) that once the application was approved and a COPR issued, IRCC had the option to cancel the sponsorship before landing (hence the CBSA comment) or not. Am I wrong?

It doesn't matter when the COPR is issued. IRCC cannot deny a sponsor's request to withdraw at any point before the PA has actually become a PR.

I would chalk that up to muddled IRCC writing. An undertaking doesn't go into effect and the sponsor isn't responsible for the applicant until they actually land as a PR. I don't see any legal way that IRCC can force a sponsor against their will to become financially responsible for someone else when the app can simply been cancelled before landing.
