I currently work for a software services company and my project will get over pretty soon. My spouse is currently working here in Canada on open work permit.
So my question here is that if I had to leave Canada, can she remain in Canada and continue with her company?

Nope, once you leave Canada, her OWP is invalid and she must cease working.

One final question. Can I remain in Canada without a job (Closed work permit valid until 2014) and my spouse continue her work? I recently applied for PR on CEC class and is expecting a decision.
 
The company she's working for will must issue a work permit for her and then you can stay. Otherwise - no, you both must leave because her open work permit is dependent on yours one.

I thought I can stay in Canada for as long as my work permit is valid. Please correct me if I am wrong.

I just finished my call with immigration call centre and they confirmed that I can remain in Canada as long as my closed work permit is valid and my spouse can continue with her company.

Thought this would help someone someday.
 
Cool, because 5 years ago they told me in the same situation I have to leave. It took to me 10 days to find new job and that saved my WP. Glad for you. Good luck.
