If we have no representative, no dependants or family members (it's just my husband sponsoring me), do we have to submit the "use of representative" and "additional family information" paperwork anyway? It's just blank...

No on the representative but fill in additional family info, you need to list parents, siblings etc. Try to leave as little 'blank' in your application as possible, use N/A with written explanations as this will help to prevent confusion for your processing officer.

If none other, you may wish to assign the "sponsor" (whichever of you two that is), as an "Authorized Representative". In that case, CIC will speak with that person about your application should the need ever arise. Otherwise, they absolutely will NOT which could be difficult if the applicant is outside Canada. We did that, and fortunately we never needed to speak with CIC.
