My wife has got a new passport and returned the old passport.

Ques: How can she provide the visa stamps for her India visits those were in the old passport?

Is it like a word doc with proper TO, THE ....., SINCERELY... etc

So your wife is normally in Canada and travels to India to visit?

If that is the case, just explain the situation as mentioned above, and provide additional proof of her visits. Things like charges on bank/credit card during that period in India, for instance, or airline tickets/receipts.

I did all the expenses, she just did airline tickets. Now what?

For my country (Saint Lucia) when an application for a new/renewal passport is submitted, once the new passport is issued, the old cancelled passport is returned to the applicant with the new passport. Like other have said include and explanatory note that when your country issues a new passport the previous passport is not returned to the applicant. IRCC can verify this.
