What i did was.. using my mobile (iphone).. i use SCREENSHOT. (for both skype and text messages)
So when it was all converted to PHOTOS, i then use USB to connect the iphone to my computer then print from there. I had like 6 screenshots per page so it will still be readable..

It depends really on what you've used to communicate and how much you used it. For example, my wife and I mainly used Skype, but also texted each other a little. Because we didn't text that much and had talked a lot more via other means, there wasn't much point including that in our evidence; we just stuck with samples of our Skype history.
If, however, texting has been pretty much your only form of communication with your partner, it wouldn't hurt to include some samples of your text messaging history.

we are hardly apart except for when we are at work and we do text but there isnt a way for me to provide a text message history without just writing it up ...

As you're living together it shouldn't really matter then. When asked how you communicate you can simply explain that you live together so there's little 'physical' (i.e. letters) or digital communication.

You can download "Kudos Chat Search for Skype" and export file to .CSV format. It makes it much easier to sort and filter your chat history.

We didn't include any skype logs, text message history, or any of that stuff with our outland application. Our primary evidence is 60 or so photos, albeit with some of those of our wedding and reception of 100+ guests.
