Your score would be locked in. Call SINP to confirm as your IELTS expired 6 months ago so you could have called then.
I have the same question, I have 87/100 score for SINP but my IELTS is expired after I submitted the file. Please let me know If I have to reappear in IELTS again or should I wait for the file get nominated.

But if your IELTS was valid when you applied after receiving the invitation, and you have AOR then don’t see an issue. Your score would be locked in.
How can I skip IELTS and how can I use a sponsor to apply for SINP ? Please advise, how many scores it'll add if I have a sponsor & who can sponsor me. I have a cousin but he already sponsored someone else & the sponsored family just arrived Canada a month ago. Please advise.

What do you mean skip IELTS? So your first cousin, a few years ago sponsored your family members, and they just just landed. He can’t sponsor another family member for another 6 months (I think).

Yes the family (sponsored earlier by my cousin landed a month ago and applied for their PRs), now my first Cousin can't sponsor for next 6 months as you advised. Could that be possible that my cousin's mother (my mother's real sister) can sponsor us, as my aunt is a recent Canadian PR too. But she don't have any income.

If she has lived in Saskatchewan for at least a year and can prove she is self supporting (income tax, pay stubs) then yes. If she is not working and has no income, no.
