Date of birth being different to Birth Certificate is indeed a problem. Explaining it with an affidavit wont do much as you are supposed to use the date of birth mentioned in the Birth Certificate. Contact your local municipality (if from India) and get the birth certificate corrected. This is not an difficult option.

DOB certificate contains correct DOB. I think affidavit won't consider by SK.

How many days usually they take to change the status from 'waiting on applicant' to 'in process'?

they take 4 to 6 days to change the status

Make sure form versions are up to date otherwise SINP will ask you to fill a new forms plus it would be better if they are signed with recent date.

Yes, for SINP you need at least 3 month recent statement meeting the required balance.
