What previous Companies? Are those Jobs same as your current applied NOC or different? If different, then no need of Experience Letter. If same, then you have to prepare Experience letter On companies letter Head, otherwise they don't consider. But you can sign and stamped it by any Sr. Officials, if the HR or Manager not available.
