You should fill Provincial Nominee. But Skilled Worker also not wrong.

No, 2 names are more impressive. You can try for Director/Proprietor/Sr. Officer etc. Copy 3-4 duties/responsibilities from your CIC NOC related, and paste them your Experience Cert., then write some more. Mention full time worker, etc.

What previous Companies? Are those Jobs same as your current applied NOC or different? If different, then no need of Experience Letter. If same, then you have to prepare Experience letter On companies letter Head, otherwise they don't consider. But you can sign and stamped it by any Sr. Officials, if the HR or Manager not available. You should include your Job duties min. 3-4 with matching NOC noted responsibilities.
