Feb 2017 got a PR card while I was living in the USA.

Permanently moved to Ontario in March 2019 with perfect planning. since then had a few vacations outside Canada. BUT in march 2020, got stranded outside Canada for 8 months due to a covid time flight ban. I had a return flight to Canada on 30 March 2020. and the flight ban happened on 14th march . Right now I am in Canada.
until today, I thought I am completing 730 days but all these days I was calculating days based on the PR card expiry date which is March 2022, and not the actual date i.e Feb 2022.

By rule, I am short of 15 days. I can apply for PR renewal once I complete 730 days plus some buffer time.

Any guidance? will I have any challenges in the process?

The answer is very straight-forward. Simply wait until you have enough days to meet the 730 days and then apply. Ideally wait longer than the 730 days and give yourself a buffer to be sure. Apply to renew your PR card sometime in April or May. No issues.

No one knows if there's delay April or May next year.

Yes, just wait and you'll be fine.

If you apply very soon after the 730 days, you can expect more scrutiny and longer processing times because IRCC may want to have a closer look to make sure you have the days.

Best option, if you can do it, is to wait 2-3 months after the 730 days and then submit your application.

Yep, just wait until you have 730 days, count carefully, then apply for your PR renewal. A buffer won't hurt.

Don't worry about your PR card expiring, as long as you're in Canada won't matter much.

Note with delays getting new card, travel may be complicated (eg boarding planes to Canada without valid PR card). When you're in compliance, though, no serious risk coming in via land border.

I don't think employers routinely ask for a PR card; you have a sin number, and you are a legal resident.

PR cards are not the status. A PR card on its own is not proof of valid PR status, and an expired one does not mean status expired either. It's also not that uncommon for PRs to reside in canada for years without renewing cards.

PR card is for travel back to Canada. As long as you already have your SIN and your medical card, you do not need "current" PR card when you stay inside Canada.
