What country is the applicant from? How much you should send depends on the country the applicant is from, and how many red flags the relationship has.
With 8 years together, you should have a lot of proof and can select the best proof, rather than sending everything. The best proof is something official, such as a lease in both names, utility bills in both names, joint bank accounts, joint credit cards, each other named as beneficiaries on life and health insurance, etc.
Then you need photos: select photos from the whole length of your relationship. You only need one from each particular event or trip, except for the wedding and honeymoon, which you should document well. Photos showing you two with each other's families and friends are also good.
Things like letters, emails, text messages, and phone bills: you can send a selection, then say you have more and will send it if the visa officer wants more proof.
You can also get family and friends to write letters stating that they believe your relationship is genuine.
Get a wide variety of proof.
