Hello, im applying for common law outland. Im the sponsor, Canadian by birth. I've been living in Asia for the past 7 years with my girlfriend.
For proof of employment/ funds
Were asked to show how I can support the person im sponsoring,

I have an affidavit from parents that we will live in their house (that they own)
and I have arranged employment.

Regarding the arranged employment, how would I correctly or formally include this to the application? Should I include the last email that shows the job offer/ position

Also I have an Employment Agreement Contract that states;
- the scope of duties
- term
- salary

Will I also need the employers signature on the contract? or is the contract draft and emails enough?

Can you please clarify which part/questions of which forms (precisely) you are trying to answer and respond to?

I believe in your case (sponsoring common-law spouse with no dependents of her own) that you only need to respond to the Question 5 on the checklist document (employment/source of income) for those not working in Canada. It says "provide other documentation you can support. This must include a detailed explanation of how you plan to support yourself and the sponsored person...". Note, paraphrasing somewhat, my underlined emphasis on explanation. I emphasised this because it asks for an explanation, not documentary proof or evidence that you can support; this implies that the evaluation of your application to sponsor in this section will be evaluated by a visa officer on the basis of credibility of your explanation overall, and that there is no precise checklist with which you must comply (apart from the 'explanation' which must be included, but no precise information provided on what the explanation must include).

So, according to this, (again, on the basis that I believe my explanation here is accurate) no-one can tell you precisely what you will need for this part - it will be considered overall. It asks for other documentation and not specific documentation such as a signed and approved job offer. Of course, IRCC can also ask for supplementary information if they wish later in the process.

On this basis, I believe that your email discussions and draft job offers will support your case that you can support your spouse. As would (for example) savings, other assets, job experience (assuming your experience is at least somewhat in demand), housing plans, your cv, education level, etc. It is possible they would take into account your spouse's experience and savings (latter on understanding that if you are common law, your joint assets are available to you both). On this latter point, although technically it is you who are required to support (and they could ignore eg her own job prospects and the like), the 'detailed explanation' will make sense in the context of a family/household budget.

Note, again, like the rest of the application, the extent to which they consider each of these things - like a draft job offer - will depend on the credibility of the specifics. If your tentative job offer is for an absurd amount for the job responsibilities and your work experience, a non-existent company, or anything they may identify as dubious, it won't help your case.

So again: I do not believe anyone can give you precise answers. Include what evidence you can that is truthful and supports your case. I doubt that a specific final job offer and acceptance would be required, but it will also depend on other aspects of your case and application.
