Hey Sam, it is good that you have worked out the letter with your lawyer. Just need to ensure there is no 'copy & paste again'. Elaboration is good to address the points in your previous letter. I have ready all my documents to send.My lawyer has updated the letter what she did is she draft the similiar letter with all the duties exlpained which we mention in previous one with some kind of proof such as health report which i used to do & keep records.

I cannot think of other things you would need to approve your actual job duties. if you have original contract which listed the duties similar to what you have re drafted, that might help as well. but confirm with the lawyer again before you submit, as sometime oversupply will cause trouble.
I would believe as long as the employment letter is good and complete, it is all good.
You may wait and see if er experienced seniors could shed more lights.
