My son has recently moved to Canada from US. He is having Tax returns sufficient to support the Parents. However, He may file his Canadian Return in Jan 2020.
Can some one tell me whether the Income from US Job can be used to show as "proof of income"

He needs three tax returns filed in Canada that meet the minimum income requirements to qualify. He won't qualify to sponsor you just with one return unless he happens to be living in Quebec.

Sorry - didn't answer your second question. From the IRCC web site:

As a rule, financial resources must originate from Canadian sources. An officer can, however, consider income received from foreign sources if it was declared by the sponsor to the Canada Revenue Agency (CRA) and appears on their Notice of Assessment (NOA). It is important to note that income abroad may not be a reliable indicator of future or stable employment in Canada. IRCC staff cannot easily verify if foreign income can be transferred to Canada and converting foreign income into Canadian dollars can be resource-intensive. In cases of default, collection and litigation, it is easier to recover income from Canadian sources.

Sponsors who commute from Canada to work in the U.S.A. can use their U.S. employment income provided it is declared as income to the CRA and appears on their NOA.

Would add that the tax deadline is in May not January. Most people will need To wait until March/April to file. You have quite a few years before you will be able to be sponsored and there is a lot of competition to be selected to bring your parents to Canada as PRs so it may take years to qualify.

No, tax deadline for individuals were extended to June 1.

We are talking about next year and in general.
I presume there will be a gap before the PGP opens (in Feb generally) and the opening dates Tax filing. So, it will take a clear 4 years of waiting with 3 Tax years and one on account of the Gap.

There were supposed to be some changes this year to the program so we'll need to see. In the past few years the application deadlines have been relatively close to the tax filing deadline.

You mean for the year 2021. Please elaborate or provide any link

You will have to ask canuck78 for the link or elaborate.

Yes there was a gap between your lottery ballot (as was PGP 2016, 2017) and when you submit the detaills (after the deadline you file your taxes). Yes, if you were lucky to be winning the ballot it will take the clear 4 years. If not, then more than 4 years.
