So far I have a letter from my parents about staying there rent free, two letters from friends confirming that I'm returning and that they'll help me, and a copy of an email from my brother about buying a car. I would say you're on the right track. Again, no one expects you to have job in hand when you return but an indication of your plans is a good idea, this is precisely what they ask for in question 11 on IMM5540. So you write a note (either in the box or in an addendum to that effect, i.e. "I'm a cook/bricklayer/banker..., and it is my intention to pursue a career as such by reconnecting with old colleagues/upgrading my xyz qualifications, etc.") With your current job you've obviously proved yourself capable of finding gainful employment (in a foreign country no less), and that is really the idea as I understand it, i.e. CIC's main concern is restricting people who have previously been on welfare.
As for your concern about Option C as a "required document", yes it is if you are currently resident in Canada. Others may correct me, but as far as I understand it since you have indicated here & will do so on IMM1344 that you are non-resident and have been for the past 5 years, it's a simple matter of explaining this as the reason for which you don't have an Option C form. With the supporting documents (employer's letter, etc.) and any other pertinent information (maybe bank statements?), plus your residency re-establishment plans, I don't see any issues.
