Hi guys, this may sound like a stupid question but under express entry, is it just 1 photo I upload, or multiple?

It's only one digital photo per applicant that you upload.(there will be only one upload field per applicant for photo)
But, be sure to have it in the specific requirements.

ANY professional photographer can take your photo for this purpose. You just go to your nearest photographer and ask him for this.
You tell him that you require a photo for visa application. Almost every photographer knows this.

But, if he doesn't know, then you tell him the specific requirements.

No need to find out SPECIALIST for this

Take a print out of photo specifications from CIC website and take to your photographer. It has measurements for face/ head ratio vis-a-vis the entire photo. Also ensure you have a neutral expression and your ears are visible. Since photo is to be on a white background, wear a darker color shirt. Most photographers may know this but mine in Gurgaon did not. I had to get it redone.

So you only need 1 photo to upload correct?, but how many do you need to have signed, dated and named. I.e. how many do you need to take with you to Canada once issued?

If I recall it correctly, you need 3 photos at the time of landing. But, I'm not sure.

I think you can worry about that later when you get your PPR.
