Below are a few things you should note:
1. Start collecting the proof of your relationship (emails, chat records, phone logs, pictures, gift receipts, travel tickets, boarding passes and whatever else you have). This takes most of the time and doing it at the last moment will not be sufficient.
2. Do remember to gather all the proofs going forward (if you are not doing already) like gift receipts, boarding passes, pictures at important landmarks where you visit together, pictures in malls, basically every single documents that in any which way says that you two are together.
3. Do fill out your and your wife's application forms already. If you can get her forms with her signatures when you are coming back after marriage, that will save time of sending the forms to you. Note that a sponsor form IMM1334 also needs her signature.
4. If your wife plans to take your surname, make sure she changes her passport (take your surname and add your name as husband) as the very first thing after getting your marriage certificate. All the forms must be filled in her new name. The PCC and medicals should also be in her new name. You do not want to touch the application in between and changing the name in Canada is a hassle.
5. Do submit all the documents (including medical, PCC, RPRF) with the application, even if there is an option to submit them later.
Do remember to check if all the forms on the CIC website are the same version as you both filled (nothing is updated by CIC in the mean time) just before sending your application.
