Need details on express entry documents

Hello,

My spouse is trying to submit documents for express entry. I have an enquiry on educational documents and experience letter.

Do we have to submit all higher and degree education certificates?

And for experience letter,what all we need to submit? Do we have to get any kind of notary seal on all documents which we are uploading or only needed notaryseal in experience letter?
We are in Canada. Please let us know if we have to submit any other documents.

I also need details on adding dependent in express entry. We have a three month old baby born in Canada. We also have her Canadian passport. So how should we proceed in adding Canadian born baby to PR express entry application?
