I am happy for you, that you were able to get this far! Congrats! I too didn't have much to do with immigration until recently.
In terms of PR's having trouble with jobs: they have basically the same rights as a citizen, just cannot vote (I am sure there is one or two more differences, but from my readings I can't remember any important ones). So, they can work like we can, she will get a SIN that will not start with a "9" (temporary SIN's start with this). So there is really no way for anyone to know that she isn't a citizen.
Also along those lines, I know here in Southern Ontario, my wife has had her OWP since the very end of June. She already has a job offer that she is contemplating.... I hope this process works out as well for your wife too!
