Yes, you only need 1 sponsor now.

That's right, your sponsor will have to fill in an SP2 form.
-When SP2 should be submitted?
You can submit it together with your application, or wait for Manitoba Immigration to contact your sponsor. If you chose the second option, ask your sponsor to complete the form as soon as possible, once you submit your application as they might request for SP2 within a month or less.
-Is it mandatory that sponsor and applicant should have met before applying? (I'm asking because I have never met my sponsor before :-X)
There is a part in the application, and in SP1 and SP2 regarding your relationship. Whether you have met each other or not. Even if you haven't met each other, you must have to have a very strong reason why this person wants to sponsor you and why you want to be sponsored by him/her. For instance, you have known each other for years, doing business together etc. Make sure you have enough proof of your relationship. May I ask, how you have known each other?
-I assume there will only be the telephonic inquiry on sponsor and sponsor doesn't have to be there physically present for interview?
So far, we haven't heard of any sponsor being physically present for an interview.
