Don't be too worried, in the worst case they may ask you for an interview, which is not the end of the world. If your relationship is genuine then it should be easy to prove in an interview. You can also present more physical evidence at interview time. You should be continuing to accumulate evidences of your genuine and continuing relationship in case you need to present additional evidence.
You should order your GMCS notes to see what they say and if they indicate a potential problem with your application.
Hi, The Goverment of Canada announced that it will remove the visit visa requirements for Mexicans (follow link below). I don't know when that will be in effect. I don't now the answer to your question, but so far when the permanent residence is approved they automatically give you a visitor's visa, and they request the passport to stamp it on it. Of course, if you are planning to visit Canada before your PR is approved that won't help you.

You're welcome!
