1. There are varying opinions on this one. Some folks will say they left blanks on various forms and didn't have any issues, others of us believe it is best to avoid questions and therefore it is best to either answer a question or add in n/a, albeit by hand as you finalize the applications to mail them in and sign them.
For family class, they have been nice and accept applications with blanks, sometimes reaching out to folks to get clarification. For other visa classes, they are known to reject the application and mail it back.
Personally, I believe it doesn't take up much time to add in n/a and would give me peace of mind so I would add them in for all forms. They can't really complain that you were detail oriented, can they?
2. Don't leave your mailing address blank. If you submit an e-mail address in addition to your mailing address you are giving CIC permission to reach put to you via e-mail. However, it is not optional not to provide an address (e.g., sometimes they do need to mail you an original document .... for example an original formal request letter from the Embassy for antecedentes registrales from the PGR will need to be mailed out to the applicant)
It may help to go through http://www.cic.gc.ca/english/information/applications/guides/3900ETOC.asp which has detailed instructions for each line for each form you'll be filling out.
