Engineering is a good field (any kind). Don't get disheartened by the jobs posted on monster etc. Specialized engineering positions do require specialized skills/ experience. But dont't expect to be hired as an engineer right off the bat. You will have the basics down but not experienced yet. so expect to start off as an Eng in-training sort of position.
the good thing about engineering is that most of the good universities have mandatory co-ops for all engineering programs. So you will have some work experience by the time you graduate and you will had made some industry contacts by then to score a post graduation job. Most co-op employers tend to hire the students they have worked with in the past since they have already spent the time and money to train them.
also, some big companies have new graduate hiring programs that are usually not advertized on sites like monster etc. For e.g. for IT graduates, Telus (one of the biggest telecoms in canada) has a graduate hiring program that once you are accepted into, rotates you through various roles for a few years untill they help you find your strengths and develop your skills on the way. You can find similar programs for engineers in the oil sector and with major engineering firms.
You sorta have to do the hard work to find job opportunities and not rely on a few websites. some universities even have discussion forums based on faculties where you can ask around from current and past students.
