The destination city listed in my COPR is Vancouver, but I plan to land in Edmonton, Alberta. Is it ok? Will the landing formalities be done in Edmonton only?
 
Landing process is initiated where you first land in Canada, even if it is for a connecting flight.

Eg., your destination is Edmonton but first landing is in Vancouver, then the landing procedure will be in Vancouver. So get a good layover in first port of entry to complete the procedure then and there. The address provided for PR card can be of anywhere in Canada.

Yes, anywhere you wish. Just get the ticket and go. It's just that the landing procedure starts at your first port of entry.
If your Edmonton bound flight lands in Vancouver or Toronto first, you have to do the landing process in Vancouver or Toronto (where the flight first stops irrespective of your destination).

Except for in Quebec if you have not applied for PR in Quebec!
