Searched all over and got some contradicting answers...

Married already, but wife does not want to apply for PR. She is not coming with me to Canada in the near future either. So it's technically a married man's single application. Shall I list her as a dependant in IMM 0008? Official guide says I must do so, but it seems in other forms I will fill in lots of info about her/her parents.

Yes, it is mandatory to list her as a dependent in your application. Failing to do this is misrepresentation. You will list her as non-accompanying if she does not plan to come to Canada. Note that she will need to provide PCCs and also take and pass the medical in order for your PR application to be approved.
