We are currently working in Canada, our kid is still in our home country living with our parents. We are now applying PR for all three of us. I am the main applicant, my wife and kid are dependences.

My question is if our PR gets approved, how does our single kid (2 years old) come to Canada without our accompany?

Anyone who has the same situation, or any clue about what is gonna happen to bring our kid to Canada?

I am assuming that our daughter will receive a PR visa, and my mother, who has a visitor visa, brings our daughter to Canada. If this is the case, I don't know what is gonna happen at the border without our help, because my mother speaks no English, and I've heard people need to show proof of the fund and answer some questions when they first come to Canada as a PR.

Hope I described our situation clearly, any reply would be appreciated, thanks!

One of my colleague told me that once you receive the confirmation of PR, you can't leave Canada until you get the actual PR card. Because the officer in airports can't recognize the confirmation and you might end up being rejected to enter...but I could be wrong though.

That is completely nonsense.
Once you receive your COPR, fly back, bring your kid over and complete the landing process at airport

Do we also get the PR visa even if we are in Canada? Our work visa has expired long ago, if we go back and bring our kid I think we need both PR visa and COPR to enter.

After COPR, can we stay in Canada for a while to get the PR cards, and then fly back to bring our kid? Just wondering if the applicants can activate the PR status separately?

Yes. They can activate it after the primary applicant has landed. You can land at an inland office or at the border via flagpoling.

Once you've landed, your child can fly anytime before their CoPR expires. So at least a few months of leeway; just don't wait until the last minute to complete your own landing.
