An Offer of Employment comes at start of your employment "offering" you a job. An Employment Letter comes
Later and describes your title, duties, full or part time, salary, benefits and dates of employment (start to finish or to the date of the letter).
Regarding proof of funds, a lot of questions came to my mind. Where did the $5000 come from? Have you been given an ITA? Is the $5000 sufficient funds to show for the programme you applied under? It would not be enough for FSW, for example. When you submitted your EE you knew that proof of funds would be required, why not open an account at that time?

Whenever you have a situation that is Different from what CIC asks, be sure to include a cover letter of explanation. Don't leave them to make their own conclusions. As someone who doesn't know you, I would have a hard time understanding why a person would keep that amount of cash that not in a bank or invested somewhere. Explain your reasons to CIC.
