On cover letter mention you made photocopy of whole set and while rechecking whole photocopied set (after you sent the package ) you noticed signature was missing on ref/exp letter

Include ref/exp letter again with same stuff and sign this time .

Request them to acknowledge this .

DAN is correct. your package must have been delivered to Halifax courier company hub and from there further sent to Sydney through local courier.

3. Yes, Tax saving FD can be shown because they can also be liquidated, if needed.
4. Not sure about the 20% paid property.
5. Ref the money you had lent to your uncle, you can explain that in the cover letter.

Property need not be shown.
