FSTP: Questions about offer of employment

Hello everyone

I'm currently in Canada on an IEC (working holiday) visa. The employer I've been working for during the majority of my stay here would like to hire me on a permanent base.
They are probably going to try and apply for an LMIA, but I was also looking into the requirements for the FST program and saw that someone can apply for this program with just a valid offer of employment if you're working in Canada already.

If you work in Canada now:
-you must be working for an employer listed on your work permit,
-your current employer must have made an offer to give you a full-time job (of the same type that is on your work permit) if you are accepted as a federal skilled trades worker, and
-you must be authorized to work in Canada on the day you apply for a permanent resident visa.

Also:
-your work permit must have been issued by CIC based on a positive labour market opinion from Human Resources and Skills Development Canada (HRSDC)
or
-you are currently working in Canada in a job that is exempt from the labour market opinion requirement under an international agreement (e.g. North America Free Trade Agreement) or a significant benefit category (e.g. intra-company transferee).

I'm wondering now if I would be able to apply for this program:
A) you must be working for an employer listed on your work permit -> If it's an open work permit, like my IEC, does any employer fall under this since it's open? Or does any employer that wants to hire me has to have an LMIA?
B) -you are currently working in Canada in a job that is exempt from the labour market opinion requirement under an international agreement (e.g. North America Free Trade Agreement) or a significant benefit category (e.g. intra-company transferee). -> Does IEC fall under this category?

do you have a red seal or any other cooking trade certificate/diploma for 3 or at least 2 years?
how many years of cooking experience you have in total including in canada and other countries? please note you can't include experience as a kitchen helper.

Not a Canadian one, but completed culinary school in Belgium. About 5yrs of cooking experience right now.

AB, and school was 4 years (it gets taught in high-school, it's not a post-secondary program there).

But do you, or anyone else, have an answer to questions A and B in my opening post? The main thing I'm wondering now is whether I should wait till my employer has an LMIA before sending in the application, or that an offer of employment is sufficient in my current situation?

that is the reason why i asked those question.
i think your work permit has to be closed and state chef or cook in order for you to apply under FST,for that your employer need to gets an approved LMIA and once the work permit is granted he can offer you a full time job offer for at least one year if granted pr or if you qualify you can apply to alberta apprenticeship and industry training as a cook and if you pass the exam you will get your alberta qualification certificate which you can use to apply under the FST without needing a job offer from your employer.also you will need to meet other requirement such as language.
but as of now you do not qualify to apply under FST.

if you will apply using employer offer of employment you will have to prove certain years of experience.
if you are going to apply using alberta qualification certificate you need to prove certain years of experience to be certified,of course pass the exam which is at 70%.
