I am about to file an extension for me and my family's visitor visa, we came here from usa for our usa visa stamping and its been delayed and can take 2 to 3 months more.

1)What documents can be beneficial for that??

2)Also we have only 10 days left in 6 month stay, would that affect on the approval?

IMO Yes.

The web site states "If you stay longer than you are allowed by your visa, you will lose your temporary resident status and you could be asked to leave Canada."

From IP06 Processing Temporary Resident Extensions manual

http://www.cic.gc.ca/english/resources/manuals/ip/ip06-eng.pdf

If an applicant applies to renew their visitor status, or their work or study permit, after their temporary resident status has expired, but within the 90-day restoration period, CPC-Vegreville will inform them that they must also apply for restoration of their status, if they have not already done so. The applicant will then have 90 days from the date of notification to submit their restoration application and the corresponding fee, which is presently $200
