A PR card can be mailed once received by a relative or friend to any address. So should not be a issue if you stay for just 5-7 days and come back too.... There is no guarantee that your PR will land in 45-60 days, it may take even 90 days at times.... usually your COPR may hold good to go back, but PR card in hand is easier.
On the other hand, job has not guarantees unless you are having a confirmed job before landing.. All of us will be sailing in same boat...

regarding job opportunities, no one can give you a guarantee that you will get your "dream salary" job immediately upon landing. it will depend upon your luck, networking, timing and faith in god. it could take more time than you expect.
