Hi! So we just submitted our application to the gov't for spousal sponsorship at the same time an application for open work permit. The thing is we have a trip to Mexico on April; my worker visa is only till January 2016; our final payment for the trip is due on December. Is there's any fastest way to extend my stay that will be able to allow me to enter Canada again on April. Thanks for the help in advance.

It depends on what country you're from and what your current status is in Canada. But you should probably start here and see what kind of extension you're eligible for:

Since you included the OWP with your Inland application, you will have Implied Status and will not have to do anything after your WP expires in January...as long as neither the application or OWP is returned, because of an outdated form, missing signature(s), or incomplete payment for the OWP (which is $255 total).
HOWEVER...if you leave Canada, you will lose your implied status. If you are not allowed to re-enter Canada, your application and OWP are toast.
