Family sponsorship
Effective December 22, 2014, eligible spouses or common-law partners have the opportunity to work in Canada while they wait for their application for permanent residence to be processed.
Citizenship and Immigration Canada (CIC) will issue open work permits to certain spouses or common-law partners who are applying for permanent residence from inside Canada, before the approval in principle decision on their application is made.

If you are a citizen or permanent resident of Canada and at least 18 years old, you can sponsor certain relatives to come to Canada under the Family Class. These can be:

your spouse,
your conjugal or common-law partner,
your dependent child (this includes an adopted child) or
other eligible relatives.
If your family member can become a permanent resident, they can live, study and work in Canada.

It said that "applications lodged from with in Canada". My situation is my partner, she currently lives with me (she is a Canadian citizen) in Australia but is moving back to Edmonton, AB so she will be working in Canada and I will still be working in Australia.

Does this mean that as soon as I receive notification that my sponsorship application is being processed (it was lodged from Australia) I can then go over to Canada and apply for an open visa?

Any feedback would be appreciated.

Note the part of the sentence that reads "who are applying for permanent residence from inside Canada". You are applying from Australia, or outside Canada, so an open work permit is not available in your case.
It doesn't refer to where the sponsor is but to where you the applicant is applying from.
 
On the Generic application form
All addresses are in Canada. We just used the address where she will be living till I get over there.
On other forms it was stated that I was finishing a contract here in Australia.

If you are submitting an Outland application (regardless of where you are residing) then this option is not available to you.
If you are submitting an inland application you are able to apply for OWP.
It appears from the information that you have provided that you are applying outland as you would have to physically be in Canada to apply Inland (and remain in Canada for the duration of the process) to avoid cancellation of your application. Regardless of what address you have used on the forms, the reality is that you are still in Australia.

No problem, I think we all grasp at straws a bit in order to try and find some way to stay with our partners....
At least we are from a country that is processed relatively quickly!
