Although 3 years gives you the maximum points in the EE system, you still need to achieve a minimum of 67 eligibility points:

Therefore, you may need to include more than 3 years of experience to get to 67.
So my advice would be include all the experience you can get reference letters for. Having lots of paper work is ok as long as it's relevant.
03-01-13 to 02-01-16 is indeed 3 years.

I am currently separated from my partner and undergoing the legal procedures. But havent got divorced yet.
Will I be able to apply for the EE in that status, when I get the ITA.
If yes, what would be the documents to be provided to prove this?

My understanding is that you can apply and claim points as a single applicant. All you will need to do is submit legal documents to show that you have filed for divorce and it is currently being processed. Once the divorce process is completed you can submit the certificate through a CSE.

I wanted to apply for ECA with WES and while looking for document requirements I came across list of autonomous colleges. But, I cannot find my University on that list. I graduated from Guru Nanak Dev University, Punjab, India.
