The expiry date on the COPR would be the date your medical exam expires OR the date your current passport expires, whichever comes first. The validity of the visa (and subsequently) the COPR cannot be beyond the expiry date of your current passport. Further, COPR is your legal doc required from your landing till pensions in Canada. This is from my work experience as I have reviewed mandatory doc section codes for a Comp in Canada.
