Does cash work counts as experience ?

Hi I worked as a cook in Australia for nearly 5 years but worked in cash didn't pay tax because of some visa issue .Do you think that experience will work for express entry for canada

oh unfortunately, you cannot claim that experience. The basic fact that CIC asks for proof of claims you make makes you ineligible as you don't have tax forms, pay stubs to back up your claim.

Technically, for foreign work experience, they never ask for such proofs. The only requirement is the letter from the employer, and everything else can be submitted if available. Now, at the same time, I really don't know whether there are other legal obstacles to claiming this kind of "illegal" experience.

might also be the case, but I have seen cases where they rejected the application as the applicant couldn't back up with tax forms. Since, the person here was in Australia, I am sure, pay stubs and tax forms were mandatory for employment. As for cases from India, Pakistan etc he would had been ok, as they were exempt from paying income tax on certain wages.

Since it was not legal employment, you would definitely be taking a risk by claiming points for it.

In theory, if you are able to get an employment letter with all the required details from that employer, there is nothing stopping you from using it as foreign work experience but the fact that you werent legally employed could potentially be an issue if IRCC were to find out.

Do you have any legal work experience you can claim?

As long as your employment was legal and on a work permit, you can claim points for work experience irrespective of the mode/form in which the payment was received. For any legal work experience that you claim, you will need to submit documentary evidence for the same.
