I have few concerns:
1. My job is Mobile Security Supervisor but it's not listed in NOC - 6316. The one listed is Security Guard Supervisor. Basically, a security guard supervisor works at a specific site and manages security operation on site, whereas a Mobile Security Supervisor drives around in their assigned quadrant, deals with emergency, respond to alarms, do random spot check on static guards, train guards and do client servicing as well. Should I stick to my title or get it changed on my employment letter ?
2. The company where I'm currently working has been taken over by another company (officially Jan 2018). I'm still on old payroll as transition is taking longer than the usual time and it will take another couple of months. They haven't closed the company yet. Should I use old company's employment letter and have the takeover mention on it ?
1a. You chose an NOC based on lead statement and job duties and responsibilities, not job title. Repeat - you do NOT choose an NOC based on job title. It does not matter if your job title is not listed.@jes_ON @DelPiero07 Please help!

1b. Your job title is what your employer says it is. Period. "Changing" that is misrepresentation.
2. You need a recent letter from your employer that is factual and includes ALL the details IRCC requires. If you or your employer feel the pending change in ownership is important, you can certainly mention that.

I'm having almost 3 years of work experience from India under NOC C. When I created my profile, I didn't mention it under the work history (no extra points for that) and I just entered my 1 year Canadian Experience.
Now, in the application for Permanent Residency, should I mention it under Work history or Personal history?

When I open it, I see the above mentioned tabs among others.
In Work History tab, we need to enter NOC code with the experience, so I entered my Canadian Exp which is NOC B. My experience from India is NOC C and I’m not claiming points for that since I’m not entitled to it as per CIC, so I didn't added as per my understanding.
Alas I applied on paper-based forms, so I still think that way . If this refers only to the skilled work experience for which you are claiming points, then NO, you do not put skill level C employment on this form.
Whereas in Personal History, it asks to list all the activities which the applicant have done in last 10 years including education, work, etc. Should I add my Indian experience in this section?
