Hello,
I applied for the PR inside Canada. I have two citizenships (Mexican and Spanish) and I am about to get my interview for the PR. I know that when accepted as a PR, you cannot leave Canada because you have to leave your passport so Immigration can make the PR Card and put it in your passport. If I have another citizenship, and therefore a passport from another country, that is not left in Immigration, can I leave Canada before getting my PR Card?

IRCC does not take your passport when you land and the PR card is not put in your passport. It will be mailed out to you around 8 weeks after you land as a PR. You are free to leave Canada after landing.

Just to add as a reminder the OP is free to leave Canada before getting the PR card but cannot return by air without having in hand the PR card or a PRTD. So either has to wait in country until receiving the PR card in the mail, or if out of the country for an extended period have it mailed/couriered or apply for a PRTD.
