Baby born after express entry draw

We are currently a family of three getting ready for express entry draw (after both DH and I get our Feb 2019 IELT results). If it all goes well we should be invited to apply by mid-2019. Problem is, we are planning to have baby #2 in mid to late 2020. DH wants baby#2 to be born in Hong Kong so s/he can have automatic HK permanent residency. Afterwards we are planning to move to Canada permanently and get citizenship for the entire family.

So my question: is it possible to add baby#2 to the application after or express entry application is approved? Would the fact that baby #2 being born outside of Canada have an effect on the family getting permanent residency, and eventually citizenship later on?

You can add a baby to your application at any time BEFORE you become a permanent resident (you actually land in Canada as PR).
So yes, you can add a baby even after being invited to apply but keep in mind you'll have to meet the requirements under which you are applying (example: more funds are required for a bigger family for FSW-O).

As long as the baby is added BEFORE you become a PR, it shouldn't affect the whole family application or cause any issues. Good luck with the baby!
