No, CoPR and Passport should be more than enough. However, it's up to you to grab something that justify your address in Canada, such us a telephone bill, cable, etc

No problem at all. You have to land first if you are the principal applicant.

I am applying for academic jobs which permanent residency is very important and has a great impact on my applications to be considered. I am not a PR yet but technically I am almost there. It's so annoying that I cannot yet declare my status and am losing my opportunities because of this.

No, you don't have to send a notification to CIC as far as I know. They are just considering your experience based on your application and all the support document you haven sent to CIC so far.
