Does anyone know if its ok if we apply for a visitors visa to Canada, while being in Australia.....but then travel to South Africa for a month, BEFORE making our way over the Canada?

Yes, you can, just ensure that you indicate on your application what date you intend to arrive in Canada. The difficulty may arise that Sydney may refuse based on your lack of ties to home country, if you are not resident in Australia.
My spouse and I are currently in Australia on a work visa, and myself being the Canadian does have ties to Canada with a land deed, and job offer letter back in Canada. Should this be enough to solve the difficulty you mentioned?

Ahh you didn't explain that you are a Canadian with a spouse that requires a TRV. You may find it difficult for your spouse to get a TRV, as CHC is going to think that it your spouse's intention to remain permanently in Canada rather than visit.
