During document background checks, the visa office can make all kinds of checks and each application will have a different breadth and depth of investigation depending on the complexity of the application and a number of other factors, including sheer luck.
My opinion is that it's unlikely the visa office will find out about travel history if it is not documented on your passport, but since I don't know for sure how deep their investigations can run, I also can't be completely certain. As another poster has already mentioned, certainly any discrepancy within your forms (for example if you have mentioned this travel history anywhere else on your application) can be picked up. But beyond that, I cannot be sure.
But you're asking us to comment on the question "Will CIC find out that I have lied to them?". Personally I don't treat those that deceive CIC with a great deal of warmth or sympathy, especially when I hear about some of the struggles of honest, genuine applicants.
In short, you will probably get away with it. But bottom line is, you lied to them, and if they do find out they will not only reject this application, but can make you inadmissible to apply again for a number of years.
When it comes to CIC honesty is always the best policy.
