1. They don't need to mention NOC code (and probably they should not because it might look fishy). But in my case, I requested my employers and supervisors to closely follow the CIC templates when they describe duties. Also, does it make sense to submit a couple of reference letters for very different professions, or is it better to stick to those that are more or less related.
Finally, is it possible to apply for a professions such as "university teacher" (can't find the NOC code though) without a work experience in that position.
2. I don't see any problem if you submit two very different job experiences as long as they are both authentic. My first job was completely different from the research I am doing now as a PhD Candidate. I submitted both of them.
3. In the appendix of NOC2011 pdf, I found "teacher, vocational institute" (NOC 4021) and "university lecturer" (NOC 4011). You might want to ask your employer to rewrite the letter with any of these acceptable titles.
