Hey, my wife(USA) and I(Canada) are now in Canada, and we were wondering if its worth going through the trouble of changing her name to mine to help speed up visa progress. And if so, would we just send all her paperwork into the American embassy?

Second...
I am going to fill out an out land visa for her because its quicker and there are no travel restrictions, but what should I put down for her current address?

If anything, changing her name beforehand will slow you down. It is not necessary to do so ahead of time and will not speed things up. It doesn't get sent to American Embassy, your application (if OUTLAND) gets sent to CPC-Mississauga.

She can put your Canadian address down, and no worries, you absolutely are permitted to file an "outland" application while inside Canada (CIC actually recommends that you do so). You could also assign yourself as an 'authorized representative' (only an additional one-page form) in case you ever wish to speak to CIC on her behalf, and also in which case they will ONLY ask for your address.
