Don't know either you have received your additional documents query from VO or not however please follow your answer as below -
1. Please prepare a cover letter and send in both ways by raise CSE and courier..

2. Yes you need to make a cover letter to “Visa officer” (as an application) and explain why you want to provide these information included your additional documents.
3. No, you don’t need to copy your previous information. Those are already have in VO. You need to provide all updated latest information included your JOB reference letter.
4. Yes you line manager/boss can provide you separate your job duty in details. And meantime you need to get a separate reference letter from your HR/Hear of company.
Further your clarification I would suggest you to communicate with same NOC in this forum or other sources could help you in details. Even if you have doubt about your further clarification on all related query then suggest to discuss with a good lawyer.
