I would like to know if anyone that sponsor their parents in Canada have added them as dependants when filing your taxes? Is this possible?

Yes, but you can claim for only one of the parents, and they have to satisfy all conditions mentioned in the link above including duration of residency in Canada to be considered a resident for tax purposes.
