- If you are a Canadian citizen, with a Canadian passport, you can stay out of the country as long as you like. You don't lose your citizenship, So i don't think there will be any problem regarding that.

- there are 2 lucky ones as of to date who got approved for sponsorship already. If you are following the December thread, some of the mid Dec applicants started receiving acknowledgement of receipt of their application. So, January applicants can expect AORs by mid March or early April (hopefully).

- In case you didn't sent out an Option C there is a big chance that CIC will still request that once they start processing your papers. But it will still depend on the officer who'll be handling your file.

Is there really no income requirement for spousal sponsorship?
- There is no income requirement for spousal relationship, as long as you don't received any social assistance or have previously filled for bankruptcy.
In case you are unemployed, just make it clear that once you land on Canada you will both actively look for a descent job to be able to support yourselves.
