Before getting ITA, LOE is not required as the EE profile is editable anyway. So, you can do whatever changes and edits required till you get ITA, no explanations needed. Profile deletion is also not required at all.

Ideally the letter from bank on bank letterhead is required. If they refuse to provide, ask them to at least put seal and signature on the bank statement to make it official.
